200 years ago, this windmill produced bread for the whole of Santorini. Today, it’s a dreamy retreat just for two. The interiors reflect the natural landscape, with buttery-smooth white stone, cool greys and dashes of turquoise and deep blue. Wake up with freshly strained yoghurt and local honey in the peaceful living space before waltzing out onto the pristine terrace for a spot of sun-worshipping. Exploring begins after lunch – clear away the plates and amble into the centre of Oia, fifteen minutes from your doorstep. If you’re feeling adventurous, seek out a cliff jumping spot at Amoudi Bay and plunge into the Aegean’s clear, cool waters. But if you’d prefer to stick to dry land, find a spot on the rocks to watch the waves gently lap the shore. When it’s time for supper, weave through streets sprayed with bougainvillaea to find a quaint seafood eatery. After a slap-up feast, hurry home just in time for sunset. Take your place in the private hot tub with a glass of fizz and watch the sky burn orange.
